we used 1 cup of quinoa + 2 cups of water, cover, boil, reduce to simmer until all water absorbed. stir fry onion, then add carrots and snap peas. stir chickpeas (already cooked) into quinoa…then top this with stir fry vegetables, feta, salt, pepper flakes and lemon. enjoy!
