Green + Good
4 potatoes, chopped + boiled
kale, chopped
peas (frozen from the garden are great, but broccoli would also be nice + zero-waste)
3/4 c. rice, uncooked (+ then cooked)
olive oil
pepper flakes
salt
splash of vinegar
basil, chopped
In trying to use as few pots as possible (here that's two), I start the rice + the potatoes at the same time. When the rice is almost finished, I throw the kale on top to steam (3-5 min). The peas can get thrown in with the potatoes for the last 3-4 minutes of boiling. After draining the potatoes + peas, toss with the rest, + top with basil. Yum.
I think this would taste great with a little flaked salmon tossed in too.
