Coconut Squash Grain Bowl
quinoa
black beans
spinach
1/2 acorn squash (cooked)
1/4 can of coconut milk
plain yogurt
pepper flakes
cinnamon
ginger
salt
Blend all ingredients from squash on down. Pour over the others. :) Enjoy!
(We ate ours with the leftover half of a local honeydew.)
